Sesame Carrot Patties & Sriracha Aioli


















These little carrot patties are probably one of the most delicious things I've eaten for a month at least. I know this may sound odd being that they are simple and almost too full of healthy stuff to sit here and try to explain how delicious they are, but I speak the truth, my Dearies. The Sriracha Aioli also helps the situation by bringing these patties from very good to excellent.

This recipe is a modified version of the wonderful Zlamushka's Vegetable Patty recipe. I just add my own spices as well as a little protein (nuts) to the mix. This produces a wonderful patty that is delicious with mashed potatoes and salad. The only downfall is that the patties can be a little crumbly depending on the juiciness of the carrots used. For example, my patties hold together much better when I can get my hands on a bag of Earthbound Organic carrots than the brand I used today. *Zlamushka uses a bigger cut on the carrot, and hers look structurally sound. Either way, just be gentle while sauteing and you will end up with an excellent meal you can feel good about...

Carrot Patties
6 Medium Carrots (peeled)
2-3 Cloves Garlic
1/4 Tsp. Onion Powder
1/2 Tsp. Paprika
1/2 Tsp. Cumin
1/2 Tsp. Salt
1 1/2 Tsp. Olive Oil
1 Tsp. Soy Sauce
1/2 Cup Organic Oats
Just under 1/2 Cup Seeds/Nuts (sunflower, almonds, walnuts, pine nuts, etc)
Sesame Seeds for topping (optional)

Sriracha Aioli
4 Tbsp. Mayo or Vegenaise
1 1/2-2 Tsp. Sriracha
4-6 Drops Toasted Sesame Oil

In a food processor, place the carrots, garlic, oats and nuts. Process to a fine meal (not to course meal or to a mush-in between!). Remove from the processor to a bowl and add the oil, soy, and spices-mix. Take a handful of the mix and form into a ball and then flatten into a patty. Place the patty on a clean plate. Continue until the mix is gone, loosely cover the patties and refrigerate for 30 minutes to an hour to 'set' the patties. Sautee in a touch of olive oil on medium low heat until both sides are golden and the patties are heated through. Dollop with Sriracha Aioli and enjoy!

  1. I am curious about the difference in carrots. The organic brand held up better. Were they drier? It seems that the drier the carrot the lesslikey it would be to fall apart. Then again maybe it's exactly the opposite! Either way, these certainly would be delicious no matter what carrot you used. GREG

  3. They look like pimped out veggie burgers! Sesame has such a unique, nut-like taste and it coaxes out the flavours of the food it's with. I'll have to try this. :)

  5. I can't wait to try these, Stella. The only carrot recipe my family likes is my carrot souffle. I am getting BORED with it!! It really is rather bland, although very pretty.
    These little patties are just packed with flavor and I think little gems. Copying your recipe now!

  7. Goodness Stella! Had you not mentioned the ingredients in this, I would've thought it was a regular salmon burger or something! They look amazing! I especially love the sesame seed coating and the idea of the sriracha aioli. Brilliant and beautiful!

  15. I just copied the recipe and will be using it in my grade 9 Foods classes as I teach cooking in the Public System in Edmonton Alberta (Canada). They will go nuts over these. I am going nuts over them by just looking at them. YOu have done them beautifully. Delicious, nutritious and economical. YOu are singing my song!

    I never would've guessed that these were carrots if I hadn't read your list of ingredients.

    I think I know why your patties are not holding together. It's got nothing to do with whether your carrots are organic or not. Most of your ingredients are powdered, cereals (oats) and nuts. Just from looking at your ingredients, I don't think you have enough binder to hold all of them together.

    Usually, patties of any kind are held together by eggs. But since this is obviously a vegan recipe, and am not familiar with vegan products, find an equivalent vegan ingredient with the binding properties of eggs. How about increase the amount of oil? Just a suggestion from a friend. :)

    I did read your recipe and saw that you had some difficulty keeping them in shape... we will figure it out in Foods class - some grated potato - or - a little flour - or- an egg...it makes sense that it won't stick as there isn't any binder in it that I can see? But - YUM!

  21. Ooh, Canadian Foodie, you know, leftover mash potato might be a good idea. Egg for sure is, but it does put an end to the vegan aspect. Not that it matters if your'e not vegan (smile)! By the way, sometimes they come out perfect. I just haven't figured out why sometimes they don't...

    I absolutely love the look of these.

    I am also a big fan of Sriarcha. Don't tell anyone, but one of my guilty pleasures is to use it in place of brown sauce when eating big fat chips. I like it.

  35. These patties are really yummy. They are sweet and savory, and push all of the right satisfaction buttons. As someone who's not keen on mayonnaise, I find my obsession with siracha mayo odd. It's just really good. The patties do break apart easily, but hey, it's food. Anyone else getting hungry?

  38. This was such an inspiring recipe! I just made some with what i had on hand Carrots, Zucchini, Ginger, and breadcrumbs with a dash of soy sauce and minced garlic. I didn't have sesame seeds so i used crushed walnuts and i used 2 eggs to bind it.
    The Sriracha Aioli put it over the top in deliciousness. I will defiantly make them again and again!
