Coconut Milk & Rosewater Panna Cotta























There are not many sweets out there that I would feel comfortable calling sweet perfection in the realm of both gustatory satisfaction and health, but this panna cotta certainly comes close. This delectable is inspired by Denise Fletcher over at Quickies on the dinner table. Denise recently posted a yogurt panna cotta with rosewater that immediately caught my eye.

I've been making panna cotta for quite a while now with coconut milk, but I never thought to add rosewater to the mix. Let me tell you that I never could have imagined how delicious coconut is with rosewater. Both flavors come through vibrantly in this enchanting dessert that I hope you will try for both hedonistic and health reasons!

I looked at Denise's recipe and just subbed coconut milk for some of the cream just because I only had a bit of heavy cream in the fridge and can upon can of organic coconut milk, and it worked out wonderfully.

Coconut Milk & Rosewater Panna Cotta
1 Cup Organic Coconut Milk
1/4 Cup Heavy Cream
1 Cup Yogurt
1/4 Cup Sugar
1/2 Tsp. Vanilla Extract
1 Tbsp. Rose Water (MaWard)
1 Packet Knox Gelatin (1 Tbsp.)

Place coconut milk, heavy cream, sugar, and gelatin in a pan and bring to medium heat stirring regularly. Once this concoction begins to simmer, remove immediately. Pour into a mixing bowl and whisk in the yogurt & extracts. Pour into oiled ramekins (an even better choice is your favorite pretty glass-no fuss with getting the panna cotta out later!). Allow to cool for 10 minutes and then place in the fridge loosely covered with plastic for at least 3 hours.
*Makes about 4 servings depending on ramekin/cup size.

Also, dearies, I don't normally endorse something like a book here, however, I have tried a few of Denise's dishes and they are reliable, quick goodies that anyone would love. So I hope when gift giving season comes around, you will consider her book shown here.














We artists need all the support we can get, so please think of it when you want to get a cookbook of easy, tempting recipes for another foodie or someone who you wish would cook more. Ooh, and it's such a pretty cover too-just how a gift should be (eye candy)!

  4. Stella - this is wonderful! Now I wish I had thought of coconut milk!! But I can still try your version, can't I? ;) Your panna cotta looks positively lovely - I can see the texture is just how panna cotta should be, tender and tremulous (my favourite word at the moment LOL). Is that candied ginger on the side? Perfect! Did Cauldron Boy enjoy this? I know I would have :)

  5. now that looks just perfect!! I have to say as much as I watch Giada I have never made Panna Cotta....I must try...and I hate to say I have never used Rosewater.....
    Thanks so much for sharing this recipe... My wife doesn't like coconut, so I may have to add more heavy cream.....lol....she loves my cooking but has restraint and unfortunately I end up eating the rest...sigh

  18. Your panna cotta looks yummy. I love how you accented it with candied fruit, or is it ginger? I havent tried making panna cotta, i think a Pinoy version of it is the Maja Blanca. Something like that, but with a more solid texture. U

  20. Your panna cotta looks absolutely divine Stella! And you're really starting to intrigue me with that rose water. I'm Canadian so we're whole foods and trader joes deprived but I'mma going to search for that rosewater till I find it. That's the reason why baking intimidates me cause usually haven't heard of some of the ingredients or I don't know where to find them. But I have to start somewhere right. And so begins my search for rose water. Baby steps right? ;-) Happy Friday dear sweet witch :-D

  25. I just stopped at the store for a bottle of rosewater last night, so I can try the biscotti recipe and I was contemplating what to do with the rest and here I see you're one step ahead!   42. Hi Stella! Say your vegan version over on vegweb and it grabbed my attention instantly! I am wondering though i have a hard time getting a hold of agar is there another vegan substitue? I have lots of white chia which is pretty flavor neutral woul that work?

  44. Hello to you Natalia!
    I'm assuming your asking about white chia in reference to its ability to gel in water. This gel, as you may know, is sometimes an excellent fat substitute in recipes and is, of course, very healthful.
    I can't say that I think you would have success in an application where gelatin or agar agar is normally used with chia gel. I don't know from experience, but I suspect you would end up with more of a jelly than a gelatin/jello...
    You can get agar online at Amazon though (an array of brands to choose from).

  49. Thank you Stella! I plan to make Denise's pannacotta today (with my home made yogurt)... I couldn't find rose syrup so I wondered about substituting with rose water. Since I've never made panacotta, I was a little chicken about changing anything. I saw your post in the nick of time!

  50. Wow Stella! These sound amazing. I never ever go past the panna cotta when I'm out to dinner. And I never thought to use coconut milk. That must add so much more flavour and silkiness. I once had a green tea panna cotta with chocolate sauce that blew my mind. Ive never been able to find a recipe for it though. Yours sounds amazing!

  51. Hi Stella! Thank you for the reply :). I have bene thinking about ordering some online but so far i have only used it very rarely so i didnt feel it was worth the investment. I will keep my eye open locally so see if i can get my hands on some more. Or more likley i will just go recipe hunting for an excuse to buy it :p lol. Thanks for the input on chia, i feel best when i get the info from someone much more experianced than I. Oh and good to know about the rice pudding thank you!

  55. the recipe looks good but I'm not a fan of yogurt, what is a good replacement for that ingredient? Also, could agar, agar replace the gelatin and how much agar would I need for this recipe?

  56. Hey Anonymous, sorry for the late reply. No, you're not blind. I removed the vegan version once I realized people were having problems getting the same result depending on the brand of agar agar they used. You are welcome to read my post on agar agar-it might be helpful;)!

    Hi Cheryl! Again, sorry for the late reply. September has been a crazy month here. You can use a vegan yogurt, but it needs to be one that really has a yogurt like consistency (not a watery one).
    In reference to agar agar, I have made a panna cotta this way and gotten great results. Then I made it again with the same measurements and got a different result due to using a different brand of agar. Hence this is a tough question. If you are using a powdered agar agar, 3/4 tsp. is a good place to start. Make sure to let it rest in the pan with the liquid for 5 minutes before bringing it to heat...
