Vegan Peanut Butter & Chocolate Chip Tart

Happy Weekend Everyone!

I just wanted to quickly share this recipe with you all before my Cauldron Boy wakes up from his slumber and wants to watch a movie. This is a peanut butter and dark chocolate chip cookie pie. Yes, it's the same type you ordered at the restaurant when you were little that came out a tad warm with a big scoop of ice cream on top. This is my vegan version of the pie, but I will show non-vegan alternatives in case this suits your fancy...

I adapted this recipe from Almost Bourdain, but actually got the idea to veganize it from another site that had linked to Ellie. I can't remember which site this was, so, if it's you, let me know!

Vegan Chocolate Chip Tart/Pie
1 Cup Organic A.P. Flour
1 1/4 Tsp. Baking Powder
1/8 Tsp. Salt
3/4 Cup Organic White Sugar
4 Tbsp. Earth Balance Buttery Spread (or butter)
5 Tbsp. Creamy Peanut Butter
1 Tsp. Vanilla Extract
1/4 Cup Flax Egg** (or 1 organic egg)
3/4 Cup Vegan Dark Chocolate Chips

**Flax egg is the easiest thing to make. The night before you plan to make this pie, place 2 1/4 tbsp. of golden flax seeds in 1 cup of water. Cover and leave in the refrigerator over night. About 8-10 hours later your flax egg is ready. I allowed flax seeds to be in my 1/4 Cup of flax egg-they're healthy and I didn't notice even one in the pie despite them being there!

Preheat oven to 350 degrees and grease an 8 inch tart or cake pan.

In a bowl, mix the flour, baking powder, and salt thoroughly. In another bowl, use a hand held mixer to cream the earth balance, peanut butter, sugar, and vanilla till smooth. Then add the egg and cream until combined-not too much! Slowly add the dry ingredients using a fork to mix, not the mixer. Last add your chocolate chips gently. Push the batter into the greased pan and distribute it evenly. Bake for 20-25 minutes. I baked mine for about 23...

Allow to cool on a wire rack for about 3 hours before slicing.

    I love this! It's like a triple cross between a huge chocolate chip cookie, a pie, and a cake. I'm allergic to peanut butter (mild allergy) but I would risk it just for a couple bites of this beauty. I say a couple bites cause there ain't no stopping at one with this deliciousness. I can just imagine how perfectly moist and scrumptious this must be, and the perfect pairing with soy milk too. You know, this is looking and sounding so good as I type I might even try this tomorrow. I'll definitely let you know if I do. Thank you for sharing your magic again. I hope

  4. I never had this when I was a kid, I somehow feel cheated by this! This looks awesommmmee. I love peanut butter, it sucks you're allergic to eat but hey if I could eat a couple of bites of dairy goodness, you can too!

  6. This tart looks perfect! I can imagine the vanilla ice-cream slowly melting on the top... or some whipped cream... yum!!
    and I've been very interested to read about flax egg. It is the first time I hear about it. Do you grind the flax seeds before soaking them?

  8. Flax egg sounds interesting... love the look of your tart, especially the yummy choc chips embedded in the top. PS: Cauldron Boy's name reminds me of the Simpsons episode with the gingerbread house witch (Susanne) and her boyfriend, George Cauldron :D

  9. Stella...I can really appreciate your flax egg integration. The only thing that I could be wondering is if grounding the seeds would be an advantage or not? I can really see how I can adopt your idea really well in some baked goods.

  15. This looks delicious Stella. I have a bag of ground flax seed that I use to put in my yogurt, oatmeal etc. I did notice on the bag that it said flax seed can be used as an egg replacement... Thanks for the info on how to do that!

  16. I never got to order dessert in a restaurant as a child! I think it had something to do with there being five kids in the family! Oh well, I'm thrilled to try it now.

    I've never heard of "flax egg" before. Does is really act as a binder like eggs?

  17. Ooh, lovely! This reminds me of those huge cookies that take the place of cake sometimes. :P

    And nice touch with the golden flax seeds! It's kind of baffling that the brown ones get all the attention when golden flax is so much lovelier! I mean, I've adapted my taste buds to be okay with brown flax but once I went golden, I never went back. ;)

    I've been meaning to try baking with flax egg and this recipe is certainly inspiring enough to finally jump in and give it a go!

    I bet this is so fudgy and chewy inside, like a giant soft peanut butter and chocolate chip cookie! Hubby would probably give me his soul, if I made this for him LOL

    Whilst I'm gone, seems like your food just getting yummier and yummier. From the corn muffin to the quesadillas... and now the irresistable choc chip peanut butter tart. Maybe that's why I got back early from Korea, you were trying to lure me back. ;)

    Honestly, looking at the ingredients, the whole thing does not seem taboo-vegan at all. If anything, I'd wipe off the vegan part if I wanted to sell it in a restaurant.

    "Warm and with a scoop of ice cream!"... you don't know how much I want that right now... I just finished my 12noon til 12 nite shift. It's cold and rainy here with me being hungry... Oh Dear. (Rumble rumble<---message from my tummy)

I want you to know because of you I stood in the Organic / Vegan section of Wegman's yesterday, trying to make sense of everything there.....baby steps...lol
