Hello Everyone!
I wanted to share a couple of vegan recipes with you all that I really enjoyed this last week. Oh, and they are, of course, Cauldron Boy approved too! Cauldron Boy is a bit more open to vegetarian and omnivore foods, so I like to think the vegan food is pretty good when he's liking it and asking for seconds;)
First, is my 'Stellar Vegan Sausage'. I really like this recipe, as it is easily made with ingredients that most people have in the cabinet save the liquid smoke. The recipe is also nice in that these really do look like sausages and taste a lot like them too. The only downfall is that the texture isn't really like sausage. The upside of the downside is that the texture is that of a delicious bean patty, so no worries (smile).
Stellar Vegan Sausage-Serves 2
1 15 oz. Can Organic Garbanzos (drained)
1/2 Cup Rolled Oats
1/4 Cup Raw Sunflower seeds
2 Tbsp. Red Onion (chopped)
1 Tbsp. Low Sodium Soy Sauce
1/2 Tsp. Cumin
1/4 Tsp. Dried Thyme
1/4 Tsp. Paprika
1/4 Tsp. Garlic Powder
1/2-1 Tsp. Hot Sauce
1/2 Tsp. Liquid smoke*
3 Tbsp. Water
*If you are vegan, be sure to use a brand of liquid smoke that is actually vegan like Colgin, etc.
In a food processor, place the oats and sunflower seeds. Process for about 7-8 seconds-that's it! Then add the rest of the ingredients. Process to a course looking meal. This probably took me about 10 seconds. It will be different from processor to processor. Just don't process down to a cream, as the mix will be difficult to work with and form into patties. You want the mix to be processed but still meal like.
Form into patties. Sprinkle with extra paprika and sauté in about one Tbsp. of olive oil on medium heat (low heat will cause for greasy patties). Allow each side to sizzle for about 2-3 minutes. Enjoy with ketchup, mustard or whatever you like!
The next recipe is a Vegan Bearnaise Sauce. This sauce was really lovely over our steamed broccoli and cauliflower.
Vegan Bearnaise-Serves 4
1 1/4 Cups Unsweetened Almond Milk
1/2 Cup Raw Cashew Pieces
2 Tbsp. Nutritional Yeast
1/2 Tbsp. Dark Soy Sauce
2 Cloves Garlic
Hefty Pinch of Black Pepper
Hefty Pinch of Dry Tarragon Leaves
1/4 Tsp. Sea Salt
1/4 Tsp Turmeric (color)
Note: Some people like to add a tbsp. of melted Earth Balance to the mix for extra creaminess.
Place all of the ingredients into a blender and blend till very smooth. Place the contents of the blender in a sauté pan or pot on low heat. The Bearnaise will look watery and not quite right. Don't worry. Bring the heat up to medium high stirring constantly. The mix will almost immediately begin to start changing to a cream texture. Once you reach your desired creaminess and texture, remove completely from the heat. Serve over your favorite steamed fresh vegetables and such.

Yum, these look great! I also love the fact that neither recipe calls for any "exotic" (=impossible to find) ingredients. :) I'll be trying the "sausage" recipe the next time I have some chickpeas on hand!

ReplyDeleteWow Stella! You sure know how to do vegan! I'm an occasional meat eater, but would surely prefer this vegan sausage over a meat sausage any day. This would go well with some avocados (wink) or even mango slices (I know, I'm weird). I have to confess something, I have never heard of liquid smoke and have no idea what that is or where to buy it. I'll have to google that as soon as I'm done here.

ReplyDeleteNice! These remind me of Sunshine Burgers. Have you ever tried them? They are pretty darn good but I'll bet your sausages are even better. I love sunflower seeds in just about anything.

ReplyDeleteLove this menu!!! Gotta say, liquid smoke is new to me and I still haven't brought myself to buy nutritional yeast that happens to be terribly expensive in our parts (don't know why).

Love the vegan sausage, it sounds great (and love the little twist on its name/your name!). Sadly for me, it would probably raise my blood sugars too much. That's the lousy part about pre-diabetes, all the healthy foods that are still to much for me. I love garbanzo beans but only in small amounts for me now. Booo!

Omg, that is SO much better than what I feared when I read 'vegan sausage'!!! This is good, real stuff. Love it. All that fake meat crap in the frozen section makes me mad because you can do stuff like this, meatless, tasty and so much cheaper and healthier!

Hey Stella, I like both these vegan dishes. I see I missed your avocado(yum) post, not to worry, just checked it out! I've always been a bean/veggie burger fan, I like them loaded up with lettuce, tomatoes, pickles, onions, whatever inside a flavorful toasted whole grain bun of some sort. I also like any sauce with cashew nuts so I will give this a try, saving to my recipe file, thanks Stella:)
ReplyDeleteNow Stella, you know I'm not a vegan or vego but I do like to taste lots of foods & these little Stella burgers (oops, sorry.... sausage) looks pretty good. Great addition using the sunflower seeds, I'd imagine that'd add an interesting texture & oil it up lot too. Nice one.

Luckily for me, liquid smoke is TOTALLY something I have in my pantry! I love the sound of this "sausage". Oh and the bearnaise - totally guilt free. Which is more than I can say for regular bearnaise...

ReplyDeleteI let out a small 'woohoo!' when I saw the Liquid Smoke ingredient - if there's one thing to make an avowed carnivore eat something, it's Liquid Smoke. I'm going to try this recipe and see if Mr Meat can spot the difference. Thanks!

ReplyDeleteI always associate sausages with you know... leftover bits of pork stuff. Having a Muslim father and spending a large portion of my childhood in the Mid East always made sausages haram in our house when I was growing up.

ReplyDeleteYou are really in the zone on coming up with incredible recipes. I never would have dreamed of a vegan Bearnaise sauce or a vegan sausage. I find it very difficult to get away from my beloved pig for the sausage but love the almost Indian influence of these spice packed recipes.

My meat loving husband is being very considerate. I still am feeding him that way but he is actually trying my food! I am going to try the sausage recipe when we are together again (living apart right now until our move is final!). Thank you for such great recipes~!

I first ate vegan sausage when I was visiting England in the 1990s. I remember how thrilled I was. What a revelation. I've never made my own so I'm thankful to you for this! I actually do have all these ingredients on hand! xo
ReplyDeleteOh my word, Stella, I had no idea that liquid smoke may not be vegan. Oh jeeze! I look on the label of almost everything I buy, but I'm certain I didn't look on the label for that. Guess I'm gonna have to go check it out. Love this recipe because vegan sausage is high on our list, but we don't buy it often because it's kind of pricey. It's nice to have an alternative. Thanks!

ReplyDeleteI really need to work on opening my mind to these creating vegan sausages. For some reason, I thought it was much much harder than this recipe. But I have all of those good-for-you ingredients on hand almost all of the time. I will definitely have try those wonderful vegan sausages.
