Pumpkin Apple Bread

Happy Wednesday, Dearies!

As you may have noticed, I have not posted as regularly due to the obligations associated with a big move. Plus, it's so hard to figure out how to take nice photos in a new place. My flat seems more like a dungeon to me right now than a viable photo studio. Luckily, I have found one little corner that gets a bit of decent light, so I wanted to share this pumpkin bread that I made for Cauldron Boy.

This bread is not quite as healthful as I've been trying to be lately, since I went on ahead and used some A.P. flour and turbinado sugar for my Cauldron Boy's sake. The result though is a bread with a texture so soft and moist that I feel comfortable calling it a 'beautiful texture', my lovelies! The soft apples are also fragrant and delicious within the spicy matrix of the bread. I feel like Fall is here despite the fact that this time of year is considered spring here in my new hollow...

Here is the recipe:

1 1/4 Cup Organic A.P. Flour
1/2 Cup Whole Grain Spelt Flour
1 Cup Turbinado Sugar
1 1/4 Tsp. Baking Soda
1/4 Tsp. Sea Salt
1/2 Tsp. Cinnamon
1/4 Tsp. Ground Ginger
1/8 Tsp. Cloves
1/2 Cup Canned Pumpkin
1 Cup Organic Soy or Dairy Milk
Between 1/3 and 1/2 Cup Vegetable Oil*
1/2 Tsp. Vanilla
1/2 Tbsp. Red Wine Vinegar
1 Apple diced & sautéed in 1 Tbsp. of E.B. on medium low heat for 7 min.
Chopped Walnuts (Topping)
*Measure exactly between these two lines on your measuring cup.

Preheat oven to 350 and line a bread pan with greased parchment paper.

In a bowl, place the flours, sugar, soda, salt, and spices. Mix thoroughly. Make a well and place the pumpkin, oil, milk, vanilla, and vinegar in it. Mix very gently till homogeneous-do not over mix. Fold in sautéed apples and pour into prepared bread pan. Sprinkle with walnuts (nuts) and cinnamon. Bake for about 50-60 minutes or till a tooth pick comes out clean. Let cool for at least an hour before slicing.

Enjoy with Tofutti cream cheese or organic dairy cream cheese!

  3. Apple bread, perfect for the season! i totally know what you mean about poor lighting. My flat doesn't get much sunlight at all... Soemtimes I am able to go out on the balcony to snap a photo but more often than not the sun is blocked there too. But that's ok! I still think the beauty of food always shines through.

  5. Oh Stella, this looks delicious! And I don't know if I told you but I finally worked up the nerve to ask my very shy (and reclusive) neighbor if I could pick the apples off her apple tree and she said YES! I'm now knee-deep in apples. Making apple sauce and apple butter. It's crazy, but I don't think I'll have to buy applesauce for a year!! I love it! Now this recipe looks like a great way to use a few more o' them apples!

    This is exactly the type of wonderful bread and baking I want to learn to make for K. Your bread looks so moist and delicious. I really love the big chunks of apples you put inside. I know that would be a sweet surprise for her as she loves apples, as does little L. I'd have to contemplate about the nuts though cause I know I wouldn't be able to resist this deliciousness. Great recipe Stella! Off to pick up K from school now. Hope you have a great rest of the week. Don't go too crazy trying to look for the perfect picture taking place cause the one you've found is already pretty great.

  9. Yum! This is similar to what i made but with a very nice twist. When I made my pumpkin bread I took it to my mom's work and all her co-workers ate it up : ]
    I was thinking of making it again for them since they loved it so but I think this will be a nice change. Especially with how many apples I am seeing at my local market and walnuts are always a great add!

This pumpkin apple bread looks just wonderful all chock full of healthy ingredients and the texture looks perfect for this type of bread:) I'm happy you found a little corner with light in your dungeon, I know exactly how you feel when I'm photographing food at home I'm literally chasing after a ray of sun light with my creation on a plate and my camera hanging from the strap, coming in on a wing and a prayer, just thought of that one, take care Stella:)

  17. Now that is comfort food in a cake. All fall flavours with pumpkin AND apple. This is definitely a keeper!

    Sorry, I've been missing for a bit. Got 15 odd exams done... about 5 more to go. (One more tomorrow actually :)

    Thanks for checking up on me. I wish you live next door, so then I could ask for a bit of a bite. Any cake with apple in it, I am in. I've been pretty much munching on take-aways most days. Time really is precious.

    Mmmmm....luscious apple chunks within the matrix of the cake?? Oh be still my heart! Are you teasing me Stella? Now you know I must try this recipe ;)

    One question - does the ribbon in the first picture have wire along the top and bottom edges? Is that why you can twirl it so beautifully and still have it hold its shape?

    I totally understand how these things can happen during the turmoils and frustrations of moving. Hopefully, soon, everything will settle down properly for you. And, hey...there's no problem if once and a while you don't follow your dietary needs to the letter...I certainly bend on that too once and a while ;o)

  31. Oh, that bread with all the lovely nuts on top looks so, so good. With those pictures, I can't imagine that you don't have a lot of good light in your new place! I have trouble getting good pictures even when I do have good light!

  37. What a great idea to throw in some diced apples! No wonder it is so moist and tasty. I see you are using the whole spelt flour. Do not be afraid to substitute the AP flour with spelt on a 1:1 ratio. Hope you settle into your new hollow soon :)

  38. I think you found a perfect corner to photograph Stella! I ususally go out side at my back yard to get natural light but not it's dark fast and rains so i dont get the pictures i want. anyway, i wanna see you new nest! :D

    this bread looks so good - moist and has texture. I've been wanting to make some bread for a while now. i gotta use a new loaf pan! it's sitting in a cupboard for quite some time. poor thing. hopefully when i get back i get a chance to bake some!

  40. Stella, you know this is definitely a must for Thanksgiving! Totally! Looks sooo moist and I and I am soooo loving the topping. By the way, what exactly is turbinado sugar? I have not heard of that. Is it the same as brown sugar? Would love to give this a shot. WOuld look perfect on the dining table. Thanks Stella!

  49. I'm glad you found a nice spot for taking photos of your delicious recipes. The bread looks amazing. I love the nuts on top. It's great to know that no egg is needed in this recipe either. It's tough sticking with no sugar baking isn't it. I have been trying to cut sugar back in recipes though and it's working out pretty well.

  59. Stella, I made this yesterday and it's already gone! I tweaked it a bit to "healthify" it but still stayed true to the original concept, and I don't think it suffered any negative side effects! Truly delicious, and I'll definitely be making this again. Everyone loved it. My sister and her boyfriend ate most of it, which was kind of disappointing since it's sooo good but it came together in a snap so now I have an excuse to make more. :P Thanks for sharing, and I hope you get everything squared away in your new home soon so you can come back and share more recipes. ;)

  68. Stella, I love your recipe. For years I have been making an apple and pumpkin bread and muffins that are somewhat similar to your recipe. But I really like where your recipe differs from mine in the spelt flour and red wine vinegar. I've yet to bake with spelt flour so I'm very curious about it. As for the vinegar well that just sounds like it would add another depth to the flavors. Ok, I gotta get my butt in the kitchen and try it.   70. I made this bread and it was delicious. I doubled up on the apples and had to use almond extract since I was out of vanilla. I also used about a 1/4 cup more pumpkin puree (so I wouldn't have to throw it out) but the bread came out super moist and wonderful.
