Dearies, this post is simply an update of deliciousness. Vegan deliciousness in the form of sweet potato pie that is! And the truth is that this pie is so rich and wonderful that it is reminiscent of cheesecake and even rivals my earlier recipe for sweet potato pie that includes eggs and dairy milk. If you are vegan or just trying to lower cholesterol this holiday season, I hope you will give this vegan sweet potato pie recipe a try-it's so easy and worth it!
Here's the recipe:
-Vegan Sweet Potato Pie-
2 Organic Sweet Potatoes (1 1/2 Cups)
3/4 Cup Turbinado Sugar
2 Tbsp. Corn Starch
3/4 Tsp. Cinnamon
1/4 Tsp. Nutmeg
Pinch of Salt
1 Tsp. Vanilla
3/4-1 Cup Unsweetened Almond Milk*
1/4 Cup Plain Vegan Yogurt
*Start with 3/4 and move up if needed.
Preheat oven to 400 degrees. Wash sweet potatoes and prick them with a fork. Bake for 45-60 minutes or until done. Remove from the oven and lower the heat to 350 degrees. Allow the sweet potatoes to cool and measure out 1 1/2 Cups of sweet potato.
Measure out your sugar and mix it with the corn starch, salt, cinnamon and nutmeg. Set aside. Place the sweet potato in a mixing bowl. Break it down and make it as smooth as possible. Add the sugar mixture and combine. Then add the almond milk, yogurt, and vanilla. Blend till completely smooth. Pour into crust and place on the middle rack in the oven. Bake for 50-55 minutes. Allow to cool on a baking rack for at least 3 hours.
Enjoy with Soyatoo vegan whipped cream or your preferred form of creaminess:-)!
-Gluten Free Pecan & Oat Crust-
1 1/4 Cups Rolled Oats
1/2 Cup Pecans
6 Dates
2 Tbsp. Vegetable Oil
1 Tbsp. Peanut Butter
3 Tbsp. Cold Water
Place pecans in a food processor and break down to a very course meal. Add oats and pulse a few times till they become part of the course meal. Then add the dates, oil, and peanut butter. Pulse till combined (the mix will be dry). Add water and pulse once or twice. Pour mixture into a pie pan and press till even and going up the sides of the pan (start from the middle and move out). Place in the fridge till crust is ready for pie batter.
That pecan and oat crust alone is enough to make my stomach growl. When it's paired with the silky sweet flavour/texture of sweet potatoes and almond milk, I can only imagine how much magic ensues!

ReplyDeleteThis truly is a piece of heaven in my mouth. I'm a big fan of sweet potato anything, vegan or not. I would even eat sweet potato on it's own straight out of the microwave or steamer. As I told you before, that was one of my childhood treats. Your version beautifully sitting in a nice fluffy pecan and oats crust certainly has me howling at the moon (sorry Cauldron Boy, beat you to it this time ;-)). If looks could kill, I would've died and gone to sweet potato heaven already. Your pictures keep getting better and better. The weather has been colder here now so how I'd love a piece of this delicious looking pie with a nice cup of hot tea all curled up beside my fireplace. I know it's a lot warmer where you are so I'm hoping you're getting some relief from the heat. Wouldn't it be nice if we could adjust the temperature to our liking huh? Stella!! I really have to urge myself and get off my comfort zone to deal with root produce. I don't think I've had sweet potato pie. I noticed you put peanut butter in a crust. That's very intriguing! My husband is watching his cholesterol and he might want me to bake this sometimes. For me, vegan or non-vegan doesn't matter much but your version is healthier and looks delicious!

I love everything about this pie: healthy, delicious, and gorgeous! The crust recipe is so unique, and I like that it doesn't rely on tons of butter or oil. I could probably eat the crust alone, but I am a HUGE sweet potato lover, and the filling sounds scrumptious. Definitely going on my "to make" list!

This looks just like pumpkin pie... and I know it would be delicious. It is definitely pie season with the wind rustling through the frozen trees and the big fluffy flakes falling silently to the ground... just like the magic dust on this page.

I put a swirl of chocolate syrup on top (for decoration mostly), but my second time around making this genius recipe I just went commando with the decor. The mixing of the sugar & spices with the cornstarch before adding the liquids is brilliant! BRILLIANT! Note to poverty stricken, dateless people: I substituted sultanas in one version of the crust. Adequate, but not as good. Stella, thou rockest!

I googled "vegan potato pie", found this site, looked over the recipe and it seemed like a quality recipe, well thought out. It was! Everybody LOVED it and said it was the best sweet potato pie they aver had! I was in a hurry though, and decided to microwave the potatoes and cooled them really quick for about 20 minutes in the freezer. the recipe did not mention taking the shins off; I did. As well I did not have three hours to wait for cooling so i used a step down process from fridge, to freezer to counter that got it right after about 70 minutes. Served it with a rice/vegan whipped topping. Forgot to pit the prunes! picked them out of the shells after i made them LOL! Reminds me of a dessert i used to have at "Angelica's kitchen" in NYC! Definitely a keeper, thanks so much!

ReplyDeleteThis was delicious. The pie crust will be used many more times in future pie variations for sure. I love sweet potato anything so this was a happy find for me. I didn't peel the sweet potatoes but next time I'm going to run it through the vitamix to get it really smooth. Still tasted delicious.

ReplyDeleteI made this for the holiday yesterday and it was the BEST sweet potato pie I've ever made or eaten...and everyone who tried it agreed! I put everything in the vitamix so the texture was perfectly smooth. The spice ratio was spot on and the crust added the right balance of crunch/flakiness. Ugh...I'm mad I only made one! lol. I'm 100% vegan and this pie is better than the dairy varieties of my past. Thank you for this!

ReplyDeleteI loved the recipe! I've been trying to stay away from certain spices, such as, cinnamon, so I substituted it with 3/4 teaspoon of coriander and 1/4 teaspoon of cardamom. Next time to make it a little less strong, I'm going to half those amounts. Otherwise, it is a yummy pie! Thanks for sharing, Stella
