A Healthy Creamy Pasta

This is a quick pasta recipe I found on one of my favorite blogs. The recipe is just so blog worthy, as it is very simple and super delicious. The major feat here though is a creamy pasta that is not fattening or dry. You know the scenario-you skimp on cream sauce for the hips and end up with a dry pasta dish, or you go ahead and make enough buttery cream sauce only to regret the indulgence later. Well, there's none of that going on here, Dearies!

You also get a dose of friendly flora for your digestive tract with this dish, which is something we can all use these days!



















Recipe adapted a bit from Serendipity-Serves 4-5
1 lb. of your favorite pasta
1 1/4 Cup Low Fat Plain Yogurt (Organic Please!)
6 Tbsp. of Basil Pesto
2-3 Tbsp. Real Parmesan Cheese
Salt & Black Pepper to taste

Boil your pasta according to package instructions.

About 3 minutes before your pasta is done boiling, place the yogurt, pesto, and cheese in a pan on very low heat-as low as your stove can go. You're only taking the chill off this mixture, not cooking it! Whisk the mixture a bit while waiting for pasta to be done. Drain the pasta well and throw into the pan. Remove from the heat immediately and mix well. Serve with extra Parmesan, sea salt, and black pepper.

p.s.-I'm going to see if I can veganize this recipe for my vegan lovelies. I feel it's just a matter of finding the right plain, vegan yogurt. Hmm?

    Hope you and Cajldron boy are having a lovely weekend. I always try to stay off blogging on the weekends but everytime I have a spare moment I find myself blogging on my phone. Especially when I see Witchy Kitchen on my google reader, how can I resist? I'll definitely have to try this wonderful recipe. My hubby is always trying homemade pasta sauce recipes and I'd have to say he's 0 for 4 now. I guess I'll have to show him how it's done (with your help...teehee) eh? Shhh....lol. Just kidding, I'm sure he'll know it's not my recipe from how great it's going to taste. Haha. And when I tell him it's partly your recipe it'll all make sense. I love that you used yogurt for that creaminess yet it's guiltfree - genius! If it's as good as it looks (which I'm sure it'll be better as your magic usually is) it's going to blow his mind away. And I totally agree with the rum. Now that's how you get some "rummy" in my tummy (wink). I'll let you know how it goes when I get a chance to make this. Thanks for sharing Stella.

  12. Great pasta, Stella, and wonderful photo. I have to go for regular checkup tests tomorrow and know my levels will not make the doc happy... must eat more food like this!!! May I also say... I love your red ribbon witchy motif... a new signature, perhaps??

  13. I never thought of using yogurt in pasta! Much lighter alternative to cream cheese or sour cream. This looks delicious, I could easily live on pasta.

  15. Thanks for avoiding extra calories that we don't need in our diets! Maintaining the waistline is getting more difficult to do these days. I try to eat a smaller amount of pasta with a larger amount of veggies or salad! Love this recipe, beautiful photographs Stella, especially nice with the little frosty glass of iced rum:-)

  16. I totally agree with you that there's a fine line between healthy...and cardboard! OK. Maybe that line is not so "fine." We have a recipe for vegan alfredo sauce that uses silken tofu whipped with a little bit of plain soy milk and nutritional yeast flakes (plus garlic, pepper & salt...of course!) I can look it up if you want me to, but we love that recipe. My daughter calls for it by name. Thanks for another great recipe and for your great pics...and digestive drinks. All the makings for a great evening!

  20. Oh my goodness Stella! That is really easy. Those shell pastas are my favorite. Like the good all velvetta days. But these are far more healthier. Wouldn't make me skip meals after having a little bite.

  33. How nice that this uses yogurt instead of cream! Already thick and delicious. I love making vegan cream sauces out of almond milk...it's really low in calories but tastes very rich and luscious!

    This looks like something I should try out tonight on my three resident males(!). I just wonder if I can get away with the yogurt part of it??? I wanted to tell you that I've made your sunflower-seed pesto a couple of times since you posted it last May, and the guys here couldn't tell that it didn't contain pine nuts (what I've traditionally used for pesto--but oh-so pricey!). It was a big dinner-time victory, both from a taste standpoint and a money standpoint. Your magical powers continue to amaze and enthrall!
