Mixed Berry Cobbler & A Giveaway!

Mixed Berry Sorghum Cobbler!

First, I hope you are all having a wonderful day, Dearies! And thank you for all of your supportive, sweet comments left throughout the last week.

This is my mixed berry cobbler. I know it is midsummer in many parts of the world, and many of you are probably in cobbler overload. But I have to share this version for multiple reasons. The main reason is its wholesome deliciousness. I have made a few different cobblers recently with different fruit to sugar to starch ratios and, of course, an array of crumb toppings. This one is the best hands down!



















Another reason is that this cobbler is made with inexpensive, organic berries from Whole Foods freezer section. Have you checked it out? A 10 oz. bag of frozen, organic blackberries is $2.69. Try buying 10oz. of conventional or organic blackberries fresh and see what you pay! So this recipe is super healthful and still budget friendly.

The last thing is that my 'crumb' topping is high fiber, low fat, and gluten-free. I can thank Claudia a.k.a. Foodessa for this feat! Claudia introduced me to sweet sorghum flour, which is an excellent gluten free flour in certain applications. I originally wanted to showcase sweet sorghum in a more fantastic way than cobbler, but after tasting this one today I no longer feel that way. Preheat oven to 350 degrees and spray 4 ramekins with oil.

For the topping:
1/2 Cup Rolled Oats
1/3 Cup Sweet Sorghum Flour
1 Tbsp. Light Brown Sugar
1/4 Tsp. Cinnamon
Pinch of salt
1 Tbsp. Maple Syrup or Honey
2 Tbsp. Vegetable Oil

In a bowl, mix the oats, flour, sugar, cinnamon & salt thoroughly. Add the syrup and oil and combine till you have a crumb like look to the mix. Do not over mix! Set aside.

For the fruit cobbler:
3 1/4-3 1/2 Cups of Frozen Berries*
1/3 Cup of packed light brown sugar
1 1/4 Tbsp. Corn Starch
1 Tbsp. Fresh Lime/Lemon Juice
*I used 1 bag of blackberries and then supplemented with strawberry & mango to reach 3 1/2 Cups of fruit.

Place berries in a large bowl. Measure out the sugar in a measuring cup and mix it with the corn starch. Pour the sugar mixture over the berries and distribute evenly. Add the lime juice and distribute properly. Place the berries in 4 ramekins being sure to overload the ramekin (the berries will shrink down when baking). Also be sure to scrape the sugar from the bowl over the berries. Divide the crumb topping between the ramekins. Place the ramekins on a baking sheet and bake for 25-30 minutes. Let cool for at least 15 minutes before eating.

Serve with coconut or dairy whipped cream. Enjoy!

  5. Hey Stella! Hope all is well with you and Cauldron Boy. You know, I don't think I've ever tried cobbler before. Yours looks mighty delicious! I love the finishing touch with the coconut whipped cream! Definitely some yummy in my tummy! I wish we had whole foods over here. I always feel so deprived when I read about all the great stuff you can get there on many of the food blogs I stalk. Haha.

    How did you score an $80 gift certificate when I only got a $40 one? Guess they give more if your dishes are better. Lol. If that's the case then I have no complaints (big smile). I'd love to get the hubby a meat thermometer so he can finally cook his meats to the perfect doness. And I'd love to get me so proper measuring spoons. Gotta start somewhere if I'm going to start baking better. Right now I just use regular teaspoons and tablespoons for measuring. Can we still be friends? Haha. Oh and I'm already an email subscriber.     For the giveaway why I want to be the winner is because I could really use more cookware. I live with all meat-eaters and it gets really frustrating having to share pots with them. I would love to have some pots that never touched meat but due to the bad economy right now, its a little hard. The gift card could really come in handy for me.   19. I've recently been converted to cobblers, which I've been 'cobbling together' for dessert, haha. Considering it's winter over here, they are the perfect dessert. I am going to get some sorghum flour this weekend and try out your version. It looks scrumptious :D

  20. Wow, I love fresh cobbler. My little bushes are just loaded this year. I have mainly been picking them and delivering them to my elderly neighbors who can't get out anymore, but I think I will do a little cobbler for myself and probably a big one to share with the neighbors.   26. I agree that Whole Foods has some of the best deals on frozen fruit, which is surprising considering that most of their store is ridiculously expensive!

  40. Mmmmm.... it's been ages since I've made a crumble (I know! You'd think at the peak of fruity perfection, i'd be all over it). I think because if it's summer time, I'll enjoy those summer fruits au naturel. But if I have abundance, I'll know what to do to make a nice, healthy alternative. Genius as always!

    I just moved to Chicago from Portland, Oregon for an unpaid PR internship. I am broke as all heck, to say the least... but since I am young, it is all part of the fun.

    One of the things I've been missing about home so far (besides family & friends) is the ability to cook elaborate dishes. My roommates (whom I met via craigslist...) are the dirtiest people on the planet! But more to the point, they don't cook, so we literally have nothing in the way of kitchen tools.

    If I were to win this Giveaway, I would use up every cent just to get a decent pitcher (recently become obsessed with Agua Fresca, but the plastic pitcher/jug we have isn't very elegant...), and if I could afford it, a blender as well. I've sooo under estimated the importance of owning a blender, or processor.

    In one final plea, I'll add that I don't need any of this stuff. As I said, being poor, and living with a bare bones kitchen has been part of the adventure of moving to Chicago. But in my experience the best gifts are not necessarily the things you need, but the things you simply wouldn't spend your money on.

    I'm not going to go buy a blender, or a pitcher, or a decent knife for that matter, because I know I can live without it. Boy... how sweet it would be though, I dare to dream.
