Buttery Pineapple Cake

















I have sat here for quite a while trying to figure out what approach to take in order to describe the deliciousness of this cake. At this point, I'm sure that I don't have the words, so I am just going to say that this is one of those recipes you keep in your arsenal for life. This is for two major reasons:

1. Deliciousness!
2. Ease

There are other reasons too like this being one of the greatest cakes I've had with my ginger tea or the fact that there is not a lot a cleanup, since it is a one bowl and no mixer required cake. This cake is also so moist and fragrant that it would work great for a layered cake with something like butter cream icing. However, I feel the top two suffice for firing up the oven and trying it. Be sure to brew a nice pot of tea or coffee and have some whipped cream handy.

Here is the recipe:
1 1/4 Cup All Purpose Flour (Arrowhead Mills is excellent)
3/4 Cup of Light Brown Sugar (no substitutions, please!)
1/8 Tsp. Salt
1 1/2 Tsp. Baking Soda
1/2 Cup Vegetable Oil
2/3 Cup Milk
1 Fresh Egg
1/2 Tsp. Vanilla Extract
1/2 Cup Drained Pineapple Chunks (tossed in a bit of flour)
*Recipe makes one layer cake*

Preheat oven to 350 degrees & prepare a glass or no burn baking dish with butter or Pam.

In a bowl, mix the flour, sugar, salt, & baking soda thoroughly. Create a well in the center, and add the egg, oil, milk, and vanilla. Mix gently till homogeneous. Add the wet, floured pineapple and mix. Pour into dish and bake for 27-30 minutes. Did you notice there isn't really any butter?

  14. Pineapple in this cake sounds definitely so tempting. I just wonder how they don't sink to the bottom of the cake as they are fresh and juicy. And no butter , little vegetable oil makes it healthy.

    I like the theme of your blog. Though we don’t get most of the ingredients that you have mentioned, mango will be available abundantly during summer and since mango cake is something i’ve unheard of, will give a try. Just that I’ll have to wait till summer.

  22. Stella- I didn't have a glass baking dish big enough, so I used an 8-inch round metal cake pan. It didn't come out very well...it was definitely burned except the very center (which was last to cook through). I am thinking I should've increased the temperature, but not sure... any thoughts?

    Other than the baking time/temp issue the batter was yummy and it smelled amazing

  23. Hey Mollie! I have been away from my blog for a while, hence this late reply to your comment.

    So sorry that the cake burned. 350 degrees Fahrenheit is the most common temperature to bake a cake, so it's strange that yours burned. In addition, since you used a smaller pan, you would usually need to leave the cake in longer so that your cake cooked all the way through (as it would be a taller, rather than a wider, cake). The only thing I can think of is that your oven may have some issues (most ovens do). It may heat up too much or not distribute heat properly. Ooh, and metal gets much more heated than glass or pyrex! That may also be the issue if you don't suspect your oven of being temperamental.

    I hope this helps, Mollie. Oh, and, just so you know, this cake is amazing normally. Hope you try it again with maybe a pyrex dish or something like that...

  25. Made these yestererday ass cupcakes with a very light layer of homemade cream cheese icing and sprinkling of brown sugar ...... not bad .... super moist. Going make it again with bananas instead of pineapple. 18 cupcakes.
