Hello Dearies!
I hope you all had a wonderful Thanksgiving Day! We had a day of work & hard labor here in the hollow but also rest, relaxation, and good eating later on in the day. One item that really stood out and that I always look forward to at this time of year was my old fashioned sweet potato pie. It is an absolutely decadent dessert that is gone within a short time of the moment it is sliced. If you have never enjoyed a piece of sweet potato pie or have only tried store bought, I really hope you will make this pie before the holiday season has ended. The recipe is so easy and turns out a lovely, healthful treat that you won't soon forget...
Oh, and it puts most store bought pies to shame!
Here is the recipe:
Old Fashioned Sweet Potato Pie
2 Large Sweet Potatoes/1 1/2 Cups of Mashed Sweet Potato
3/4 Cup Turbinado Sugar*
3/4 Tsp. Cinnamon
1/4 Tsp. Ground Ginger
1/8 Tsp. Clove or Cardamom
Pinch of Salt
2 Large Organic Eggs
1 Cup Organic Reduced Fat Milk
1 Tsp. Real Vanilla Extract
Preheat oven to 400 degrees. Wash your sweet potatoes and prick them with a fork in a few places, so they don't implode/explode in the oven. Place a piece of foil in the oven and put the potatoes on top. Bake for 45 minutes or until completely soft and well cooked. Remove from oven and bring the temperature down to 350 degrees.
Once cooled, measure out 1 1/2 Cups of sweet potato and place it in a mixing bowl. Mash it very well with a fork-you want it to be pretty smooth.
Place the sugar, spices and salt in the bowl and mix. Then add the eggs, milk, and vanilla. Use a whisk to mix the batter until it is homogeneous. Pour into a homemade uncooked crust (use a crust protector if you like-I didn't and mine did not burn). Bake for 50-55 minutes. Allow to cool on a baking rack for at least three hours.

ReplyDeletebeing from the south, I do enjoy a sweet potato pie! Yours looks so rich and delicious! I don't think there are many people who could tell the difference between pumpkin and sweet potato, if you do a good job with seasoning! I think its just the thought of a sweet potato pie that starts the juices flowing....yumm....much better than just pumpkin!

Hi Stella, It sounds like you had a very nice Thanksgiving. Your pie is making me drool! I've never had sweet potato pie but about a week ago I was thinking that I would really like to try it. It looks just like pumpkin, your photos are so beautiful! I'm going to bookmark your recipe so I can try it finally. I'm sure it's going to taste amazing. I'm really craving it now:)

ReplyDeleteBack from Costco...hahaha. I don't think I've ever had sweet potato pie before. I've had pumpkin pie, but never sweet potato. I'll have to say that the first time I ever had pumpkin pie was the first time I ever had pumpkin anything so I wasn't sure what to expect. Guess I can say I don't hate it, but I don't love it either. Now sweet potato, ha, that's a whole different story. I love sweet potato anything. In fact, when I was younger and I refused to eat rice (white girl remember? wink), my dad would steam sweet potatoes for me and I would eat them plain. So these are childhood favorites for me. This pie sounds absolutely wonderful, Stella. You've taken one of my childhood foods and kicked it up a couple notches. The child in me is jumping up and down with delight right now, and the mom in me cannot wait to share this with my kiddies! Thank you for this delicious pie recipe. I'm going to have to bookmark this one for sure. Thanks for bringing out the child in me again.
Stella, I really do hope you get those computer problems fixed soon. I know I'd go crazy without a computer or Internet. I'd miss all my bloggie friends too much. Glad you had a nice Thanksgiving, Stella! I nearly made sweet potato pie this year but in the end I went with pumpkin. Your pie does looks magnificent! I still have sweet potatoes waiting in my fridge. I really think I'd better make your pie with them! ;)

Sweet potato pie, just the sound of it drives me crazy Stella! Beautiful photos that show off the deliciousness of that wonderful bite. Now that the holidays are on us and I'm thinking about my various baking projects, I'm also thinking about your healthy recipes and wonder what you will be presenting here???? :) I'm definitely feeling like cooking light at the moment and as appealing as all the ingredients like chocolate, sugar, butter etc. are I'm feeling like lightening things up this holiday:)

ReplyDeleteStella!! I love sweet potatoes but would you believe I've never made a sweet potato pie before? I usually just gently simmer them with pandan leaves then lightly sweeten the fragrant liquid they're in. Sounds simple I know, but so delicious!!

You know I've never had an authentic sweet potato pie. I've always been meaning to try it, but since it's not very common in New Zealand, I never get the chance to.
