These little carrot patties are probably one of the most delicious things I've eaten for a month at least. I know this may sound odd being that they are simple and almost too full of healthy stuff to sit here and try to explain how delicious they are, but I speak the truth, my Dearies. The Sriracha Aioli also helps the situation by bringing these patties from very good to excellent.
This recipe is a modified version of the wonderful Zlamushka's Vegetable Patty recipe. I just add my own spices as well as a little protein (nuts) to the mix. This produces a wonderful patty that is delicious with mashed potatoes and salad. The only downfall is that the patties can be a little crumbly depending on the juiciness of the carrots used. For example, my patties hold together much better when I can get my hands on a bag of Earthbound Organic carrots than the brand I used today. *Zlamushka uses a bigger cut on the carrot, and hers look structurally sound. Either way, just be gentle while sauteing and you will end up with an excellent meal you can feel good about...
Carrot Patties
6 Medium Carrots (peeled)
2-3 Cloves Garlic
1/4 Tsp. Onion Powder
1/2 Tsp. Paprika
1/2 Tsp. Cumin
1/2 Tsp. Salt
1 1/2 Tsp. Olive Oil
1 Tsp. Soy Sauce
1/2 Cup Organic Oats
Just under 1/2 Cup Seeds/Nuts (sunflower, almonds, walnuts, pine nuts, etc)
Sesame Seeds for topping (optional)
Sriracha Aioli
4 Tbsp. Mayo or Vegenaise
1 1/2-2 Tsp. Sriracha
4-6 Drops Toasted Sesame Oil
In a food processor, place the carrots, garlic, oats and nuts. Process to a fine meal (not to course meal or to a mush-in between!). Remove from the processor to a bowl and add the oil, soy, and spices-mix. Take a handful of the mix and form into a ball and then flatten into a patty. Place the patty on a clean plate. Continue until the mix is gone, loosely cover the patties and refrigerate for 30 minutes to an hour to 'set' the patties. Sautee in a touch of olive oil on medium low heat until both sides are golden and the patties are heated through. Dollop with Sriracha Aioli and enjoy!
I am curious about the difference in carrots. The organic brand held up better. Were they drier? It seems that the drier the carrot the lesslikey it would be to fall apart. Then again maybe it's exactly the opposite! Either way, these certainly would be delicious no matter what carrot you used. GREG
ReplyDeletefantastic looking :) I love carrots and I love Sriracha :) This is very unique
ReplyDeleteThey look like pimped out veggie burgers! Sesame has such a unique, nut-like taste and it coaxes out the flavours of the food it's with. I'll have to try this. :)
ReplyDeleteThe carrot patties look disgustingly healthy - thank goodness the gorgeous aioli is there to bring us back to normality (yum!)
ReplyDeleteI can't wait to try these, Stella. The only carrot recipe my family likes is my carrot souffle. I am getting BORED with it!! It really is rather bland, although very pretty.
ReplyDeleteThese little patties are just packed with flavor and I think little gems. Copying your recipe now!
Oh, I am totally going to try this! It sounds like it would make a great veggie burger! So healthy and filling I'm sure.
ReplyDeleteGoodness Stella! Had you not mentioned the ingredients in this, I would've thought it was a regular salmon burger or something! They look amazing! I especially love the sesame seed coating and the idea of the sriracha aioli. Brilliant and beautiful!
ReplyDeleteStella
ReplyDeleteI am so intrigued by these carrot patties! Now I know what to do next time I have carrots languishing in the fridge! I am crazy for sesame seeds so this won't be a problem at all!
These would make a great veggie burger! Get it on a bun.
ReplyDeleteAnd you need to go to Disney Stella!
These look fantastic! And the Sriracha Aioli to die for <3
ReplyDeleteWow....I want to make now. Looks amazingly delicious!
ReplyDeleteStella girl...those look amazing! Invite me for lunch and I'll fly by the seat of my broom to ya...he he!

An awesome creation! I love the addition of sesame in the carrot patties and the sriracha aioli is very inspiring!
ReplyDeleteIt never would have occurred to me to use carrots this way, but it looks great. And anything is better with sriracha...
ReplyDeleteI just copied the recipe and will be using it in my grade 9 Foods classes as I teach cooking in the Public System in Edmonton Alberta (Canada). They will go nuts over these. I am going nuts over them by just looking at them. YOu have done them beautifully. Delicious, nutritious and economical. YOu are singing my song!
ReplyDelete:)
Valerie
Dear Stella - You had me at Sriracha :)
ReplyDeleteBrilliant in a aioli and even more brilliant in the way you pair with those marvelous carrot cakes. Lovely :)
Ciao, Devaki @ weavethousandflavors
Sriracha aioli? I'm gonna go with what Devaki said.
ReplyDeleteI never would've guessed that these were carrots if I hadn't read your list of ingredients.
I think I know why your patties are not holding together. It's got nothing to do with whether your carrots are organic or not. Most of your ingredients are powdered, cereals (oats) and nuts. Just from looking at your ingredients, I don't think you have enough binder to hold all of them together.
Usually, patties of any kind are held together by eggs. But since this is obviously a vegan recipe, and am not familiar with vegan products, find an equivalent vegan ingredient with the binding properties of eggs. How about increase the amount of oil? Just a suggestion from a friend. :)
Beautiful flavor profile and textures!
This looks great! Something I would see in fancy restaurants and pay $$$$ for!
ReplyDeleteInteresting point about eggs...
Thanks you Stella!
HI!
ReplyDeleteI did read your recipe and saw that you had some difficulty keeping them in shape... we will figure it out in Foods class - some grated potato - or - a little flour - or- an egg...it makes sense that it won't stick as there isn't any binder in it that I can see? But - YUM!
Hey Kitchen Masochist, yeah, you might be right. I'm still playing with them and trying to figure out a fully consistent recipe. I decided to post them despite not having one yet, b/c they are so delicious and healthful-even cheap...
ReplyDeleteHey, I hope you are having a nice day in the wonderful land of the Philippines today.
Ooh, Canadian Foodie, you know, leftover mash potato might be a good idea. Egg for sure is, but it does put an end to the vegan aspect. Not that it matters if your'e not vegan (smile)! By the way, sometimes they come out perfect. I just haven't figured out why sometimes they don't...
ReplyDeleteOh, I can't wait to try these. I love Sriracha on just about anything but have never made an aoili with it. This beats the you know what out of a turkey burger for lunch any day. Also, nice photos!
ReplyDeleteThese carrot patties look very good!
ReplyDeleteoh this is a great recipe! i would definitely prefer my kiddies to eat this over a regular burger any day. heck i would prefer these over regular patties! i never was a big meat eater. thank you for the recipe.
ReplyDeleteWow, I'm with Divaki, you totally had me with "Sriracha!" This looks so so so yummy, and the photo is absolutely gorgeous!
ReplyDeleteOK this recipe is far away from me, because i have never tasted Sriracha!
ReplyDeleteBut from the photos, i understand that is delicious!
I'm glad I found your blog! I've always wanted to try a new vegan patty. This sounds perfect!
ReplyDeleteLovely combination of flavours and it looks so filling as well. A perfect vegetarian dish!
ReplyDeleteDid someone say,.... Sriracha??? *does a jig*. It looks deceptively Not like carrot. Will have to try and pull the wool over someone's eyes with this.

This looks amazing stella. I love the flavor combination of the carrots and aioli. Yum!
ReplyDeleteOh Stella,
ReplyDeleteI absolutely love the look of these.
I am also a big fan of Sriarcha. Don't tell anyone, but one of my guilty pleasures is to use it in place of brown sauce when eating big fat chips. I like it.
And - holy cow, how did I miss this post?! MUST make these, asap!! How many patties did this make for you?
ReplyDeleteI've never seen anything like these - must give them a try :)
ReplyDeleteI love a healthy recipe that tastes great! Thanks for sharing it!
ReplyDeleteYou know what? Me likey :-D
ReplyDeleteI'll try them this week.
These patties are really yummy. They are sweet and savory, and push all of the right satisfaction buttons. As someone who's not keen on mayonnaise, I find my obsession with siracha mayo odd. It's just really good. The patties do break apart easily, but hey, it's food. Anyone else getting hungry?
ReplyDeleteI know you published this QUITE awhile ago but I just got around to making it and it was unbelievably delicious and also super easy! Thank you!
ReplyDeletei dont like carrots that much but as i've see this post, it looks very interesting and looks very delightful. maybe ill try this on this coming weekend.
ReplyDeleteThis was such an inspiring recipe! I just made some with what i had on hand Carrots, Zucchini, Ginger, and breadcrumbs with a dash of soy sauce and minced garlic. I didn't have sesame seeds so i used crushed walnuts and i used 2 eggs to bind it.
ReplyDeleteThe Sriracha Aioli put it over the top in deliciousness. I will defiantly make them again and again!
Hey Tamara, I'm glad you liked them! We always think that they are a wonderful food too-healthy and inexpensive (smile)...
